Bitterness: 41 IBU
OG: 1.077 FG: 1.012
Alcohol: 8.3% v/v (6.5% w/w)
Water: 1-tsp water crystals to tap water.
Grain: 8 oz. American victory
1 lb. American crystal 10L
1 lb. Flaked rice
Steep: Added grains to muslin sack.
Steeped in 1.5 gal of water maintained at 65C for 60 minutes.
Slowly rinsed 1 gal of 78C water through sack in colander above boil pot.
Boil: 60 minutes SG 1.153 2.5 gallons
7 lb. Light malt extract
1 lb. Brown sugar
1 lb. Honey
1-tbs Irish Moss 45 minutes into boil.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 45 min.)
1 oz. Northern Brewer (8.5% AA, 30 min.)
1 oz. Northern Brewer (8.5% AA, 15 min.)
Yeast: Wyeast 2112XL California Lager Smack Pack
Added 25 drops of Beano to fermenter to help the yeasties digest the harder
to digest sugars.
Log: Allowed 7 days for primary fermentation using a blow-off airlock.
Transferred to secondary. Added 1 tbs finigs gel to 1 cup of cold
water and allowed to swell for 30 minutes. Heated to 82C then cooled to 30C
before adding to secondary. Topped to 5 gallons with cold water.
Inserted standard airlock and allowed to settle another 7 days.
Repeated the finings gel treatment a second time for another 7 days.
Carbonation: Added 1 well rounded tbs of cane sugar to prime and beano does the rest. Packed into 18 1L EZ-top bottles
Tasting: This turned out great! It has a subtle citrus undertone, nice amber
color and smooth taste all while it packs a punch. The measured ABV is ~10%.
