Sweet Potato Pie

This beer is pretty awesome! I've also made another version of this with butternut squash and maple syrup instead of the sweet potatoes and brown sugar. Also quite tasty!

Alcohol: 7.0% v/v (5.5% w/w)
Water: City of Ann Arbor tap water.
Grain: 7 lb. American 2-row
1 lb. American Munich
1 lb. American crystal 60L
Mash: 75% efficiency
Sweet potatoes go in the mash. Peel and cube 2lb of sweet potato (I used garnet "yams", actually a sweet potato, not a yam. Don't know why they're called yams. A true yam is a tropical root vegetable, similar to a sweet potato, but not one).

Anyway, peel and cube the sweet pots, boil til soft. Mash & spread sweet potato on a baking sheet about 1 in thick and bake in a preheated oven @ 300° for 30 min, or until slightly browning(NOT BURNED). Put on top of grains in mash. Have enough water in your mash to cover the sweet pots. I usually go with 1 qt of water to every lb of grain for my mash, but with all that sweet potato, i use about a gallon more than that for this brew. I just use that much less sparge water.

You will also need about 1 lb of rice hulls to prevent the goopy sweet pots from clogging your mash! Important!!

Mash at 154° for at least one hour.

Sparge for at least one hour.
Boil: 60 minutes SG 1.056 6 gallons
2 lb. Brown sugar
Adding 2lb of brown sugar at the last min of boil.
Hops: .5 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 45 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Northern Brewer (8.5% AA, 15 min.)
Yeast: wlp 001 Cali Ale Yeast in a 1 quart starter.
Carbonation: Force carb at 25 psi over night. Serve at 5-7 psi.
Bottle conditioned, 3/4 cup of priming sugar.
Tasting: YUM!
