La Fin Du Monde Clone

First attempt cloning La Fin Du Monde from Unibroue, Chambly, Quebec

Type: Extract w/grain Size: 5 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 28 IBU
OG: 1.076 FG: 1.008
Alcohol: 8.7% v/v (6.8% w/w)
Grain: 2 lb. Belgian Pilsner
1 lb. American crystal 20L
1 lb. Belgian CaraVienne
1 lb. malted white wheat
Steep: steep grains in grain bag, hold heat between 130-145 degrees for approx 120 min, then 150-160 for 1 hr
Boil: 60 minutes SG 1.189 2 gallons
6 lb. Light dry malt extract
1 lb. Corn sugar
1/2 tsp of irish moss
Hops: 2 oz. Perle (8% AA, 60 min.)
1 oz. Styrian Goldings (5.5% AA, 45 min.)
1 oz. Fuggles (4.75% AA, 45 min.)
Yeast: White Labs Belgian Golden Ale Yeast WLP570, made starter w/ approx 3/4 cup of DME the night before
Tasting: Wonderful example of a Belgian triple but not quite the Canadian/Belgian flavor profiles without their yeast strain, closer to Chimay. I've done variations on this recipe 3 times now all are excellent. My European friends all love it and it gets consistantly better with more complex flavor notes as it ages. The longest I've been able to keep bottles around is 18 months.
