Alcohol: 7.1% v/v (5.6% w/w)
Water: R.O. water with 2 tsp gypsum added to the mash.
Grain: 16.8 lb. American 2-row
1.5 lb. Special Roast
0.77 lb. Belgian aromatic
1.27 lb. American crystal 40L
3.07 lb. Belgian CaraMunich
1.23 oz. Roasted barley
1 lb. Flaked wheat
Mash: 85% efficiency
Mash at 150*F for 60 minutes, 10 minute mashout at 168*F.
Boil: 60 minutes SG 1.058 13 gallons
Whirfloc tablet added at 15 minutes prior to flameout. Yeast nutrient added 5 minutes prior to flameout.
Hops: 1.79 oz. Galena (11% AA, 60 min.)
2.05 oz. Chinook (13% AA, 15 min.)
1.03 oz. Centennial (9.2% AA, 10 min.)
1.03 oz. Columbus (14.7% AA, 10 min.)
1.03 oz. Amarillo (10.1% AA, 5 min.)
1.03 oz. Columbus (14.7% AA, 5 min.)
2 oz. Amarillo (aroma)
3 oz. Centennial (aroma)
3 oz. Columbus (aroma)
Yeast: 2 packets US05, rehydrated.
Log: Dry hop schedule is as follows:

1st dry hop: ("day 0"): 1 oz centennial and 1 oz columbus
2nd dry hop (day 3): 1 oz centennial and 2 oz columbus
3rd dry hop (day 6): 1 oz centennial and 2 oz amarillo

Keg on day 10.
Carbonation: Keg and slow carb to 2.3 volumes.
