This 10 gallon batch of American Wheat will be divided and dosed with strained fruit puree in the keg.

Bitterness: 28 IBU
OG: 1.044 FG: 1.012
Alcohol: 4.1% v/v (3.2% w/w)
Water: R.O. water. 4 grams gypsum added to mash.
Grain: 3.2 lb. American 2-row
4.3 lb. Wheat malt
1.32 lb. American crystal 40L
0.66 lb. Dextrine malt (Cara-Pils)
3.9 lb. Flaked wheat
Mash: 86% efficiency
60 min mash at 156*F. 10 min mashout at 168*F. Fly sparge for 1 hour.
Boil: 60 minutes SG 1.036 11.5 gallons
1 tsp yeast nutrient added to boil 5 mins before flameout.
Hops: 1.25 oz. Galena (11% AA, 60 min.)
Yeast: 2 pkts of US05, rehydrated.
Log: Cold crash 24 hrs in keg. Add chilled, strained fresh fruit puree to taste.
Carbonation: Keg, force carb.
