Hop Head's Paradise

This is a West Coast Bitter. An American Pale Ale in grist, but Double IPA in hopping levels.

Bitterness: 123 IBU
OG: 1.050 FG: 1.011
Alcohol: 5.0% v/v (4.0% w/w)
Water: Filtered tap water. Use 2 tbsp of 5.2 pH stabilizer in mash.
Grain: 15 lb. American 2-row
1 lb. German Munich
0.5 lb. American victory
0.5 lb. American crystal 40L
Mash: 80% efficiency
30 minutes at 150°F, raise to 155°F for an hour, than raise to 168°F to mashout.
Boil: 90 minutes SG 1.042 12 gallons
2 tabs of Whirlfloc
Hops: 1 oz. Centennial (10.8% AA, 90 min.)
.5 oz. Chinook (13.9% AA, 90 min.)
.5 oz. Columbus (16.1% AA, 90 min.)
1 oz. Centennial (10.8% AA, 60 min.)
.5 oz. Chinook (13.9% AA, 60 min.)
.5 oz. Columbus (16.1% AA, 60 min.)
1 oz. Centennial (10.8% AA, 15 min.)
.5 oz. Chinook (13.9% AA, 15 min.)
.5 oz. Columbus (16.1% AA, 15 min.)
1 oz. Centennial (aroma)
.5 oz. Chinook (aroma)
.5 oz. Columbus (aroma)
Yeast: 1600ml starter of WLP001 (2 vials)
Log: Same mix of the three hops per 5 gallon keg in dry hops.
