4 oz. American chocolate
1 lb. Flaked corn
1 lb. Acidulated malt
Mash: 73% efficiency
Mashed grains 148 ° F 75 mins
Boil: 75 minutes SG 1.044 6.5 gallons
4 oz. Corn Sugar
Hops: .5 oz. Brewers Gold (8.5% AA, 60 min.)
.5 oz. Brewers Gold (8.5% AA, 15 min.)
Yeast: Wyeast belgian Lambic blend 3278
Log: Let ferment for 8 months be fore bottling.
Carbonation: Used priming sugar and Champagne yeast, will bottle condition for at least 3 months.
Tasting: When transfering to bottle bucket, aroma and color were great. Reminded me of Rodenbach Grand Cru.
