Water: Charcoal filtered
Grain: 10 lb. American 2-row
2 lb. American pale
1 lb. American crystal 40L
Mash: 65% efficiency
4.5ga carbon filtered water with 4g gypsum and step mash: 45min@150°, heat to 170° over 15min or add 2.5ga boiling water, adjust and maintain temp for 10min. Sparge with 175°. Collect 6.6ga.
Boil: 75 minutes SG 1.047 6.6 gallons
Whirlfloc added towards end.
Hops: 1 oz. Centennial (9.1% AA, 45 min.)
1 oz. Centennial (9.1% AA, 30 min.)
2.7 oz. Cascade (4% AA, 15 min.)
2.7 oz. cascade (dry x1wk) (aroma)
3 oz. centennial (dry x1wk) (aroma)
Yeast: Wyeast 1056
Log: Chill wort to 64°. Add dry hops after 1 week and allow to stay in beer 1 week. Rack into secondary and cold age for 1 week before putting into bottles/keg.
Carbonation: May put half into mini-keg and force carbonate. The other half bottled @ 0.8oz/ga priming sugar.
