Bitterness: 32 IBU
OG: 1.065 FG: 1.011
Alcohol: 7.0% v/v (5.5% w/w)
Water: 1/2 teaspoon gypsum pre-boil
Grain: 1 lb. American 2-row
1 lb. Belgian pale
1 lb. Belgian CaraVienne
Steep: Steep in grain socks at 156 for 45 minutes remove grain and bring to boil.
Boil: 90 minutes SG 1.119 3 gallons
4 lb. Light dry malt extract
2 lb. Belgian candi sugar
1 lb. Honey
Remove from heat and add extract and candi sugar.
Again bring to boil and add hops.

Add the honey and 1 tsp Irish Moss - 15 minutes from end of boil.
Hops: 2 oz. Styrian Goldings (5.5% AA, 90 min.)
1 oz. Saaz (3.75% AA, 15 min.)
1 oz. Saaz (3.75% AA, 10 min.)
1 oz. Styrian Goldings (5.5% AA, 10 min.)
Yeast: Wyeast Belgian Strong Ale - 1388
Log: Primary for 7-10 days; Secondary 14-20 days
Carbonation: 4.5 ounces of brown sugar. Boil the sugar in 2 cups of water for at least 10 minutes;allow it to cool while covered; pour into bottling bucket then rack from secondary into bucket to bottle.
