Thunder Chicken Pale Ale

A big malty American Pale Ale brewed for the spring gobbler season.

Type: All grain Size: 5.5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 54 IBU
OG: 1.066 FG: 1.014
Alcohol: 6.7% v/v (5.2% w/w)
Water: Tapwater with 1 TBS 5.2 stabilizer and 2 tsp gypsum.
Grain: 10 lb. American 2-row
6 oz. Gambrinus Honey Malt
8 oz. American victory
5 oz. Carapils
1 lb. American crystal 60L
4 oz. American crystal 80L
Mash: 80% efficiency
Single infusion, 153°F for 60 minutes (1.3 quarts per lb). Pull 1 gallon decoction, add to 1 gallon boiling water, bring to boil and reintroduce to mash to mash out at 165°F. Continuous sparge with 175°F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.048 7.5 gallons
Hops: 1 oz. Simcoe (12.2% AA, 60 min.)
1 oz. Cascade (6.4% AA, 15 min.)
.5 oz. Citra (whole leaf) (aroma)
Yeast: Safale US-05 from a prior batch.
Carbonation: Keg and force carbonate.
