Funky Dunkle

My second original Dunkelweizen recipe. Lofty expectations for this one...

Type: All grain Size: 5.5 gallons
Color:
35 HCU (~17 SRM)
Bitterness: 16 IBU
OG: 1.052 FG: 1.011
Alcohol: 5.4% v/v (4.2% w/w)
Water: Reverse osmosis water; 1/2 tsp calcium carbonate added to mash to raise pH to 5.2.
Grain: 4.35 lb. Wheat Malt
3.4 lb. German Munich
1 oz. Chocolate Malt
6.9 oz. British Crystal 70/80
6.9 oz. Belgian Special B
Mash: 90% efficiency
Single infusion mash, 150F for 60 minutes.
Boil: 60 minutes SG 1.038 7.5 gallons
Whirlfloc tablet added 15 minutes prior to flameout. 1/2 tsp Wyeast yeast nutrient added 5 minutes prior to flameout.
Hops: .75 oz. Kent Goldings (6.1% AA, 60 min.)
Yeast: WLP300, no starter.
Log: Pitched yeast at 74F, set (beer) temperature probe to 68F for duration of fermentation.
Carbonation: Keg and force carbonate to style.
