Lemon Saison

Brewed 3/10/2012 as a pilot batch for Barry's Tree Lemon Saison.

Color:
3 HCU (~3 SRM)
Bitterness: 18 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.3% v/v (4.9% w/w)
Water: All water is RO
Grain: 20 lb. German Pilsner Malt
4 lb. Wheat malt
Mash: 72% efficiency
Mash in with 160°F water to rest at 150°F for 1 hour. Check for conversion & mash out at 168°F.
Boil: 60 minutes SG 1.056 13 gallons
1.5 lb. Belgian candi sugar
2 oz. Candied Lemon Rind
Add 2 oz. Candied Ponderosa lemon rind at knock out & 2 oz. in secondary. Adjust in secondary as needed.
2 Tablespoon Irish Moss last 15 min. of boil.
Hops: 2 oz. Kent Goldings (3.8% AA, 60 min.)
2 oz. Kent Goldings (3.8% AA, 30 min.)
Yeast: 1800 ml. starter of White Labs WLP 550 Belgian Ale Yeast.
