Yellow Creek Pale Ale

A clone recipe of Dale's Pale Ale brewed for the 2012 PA Trout Season Opener at Yellow Creek, Indiana, PA.

Type: All grain Size: 5.5 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 75 IBU
OG: 1.065 FG: 1.010
Alcohol: 7.1% v/v (5.5% w/w)
Water: Tap water with 1 TBS 5.2 Mash Stabilizer, 2 tsp Gypsum.
Grain: 9 lb. American 2-row
1 lb. 8 oz. German Munich
2 lb. Caramunich
Mash: 78% efficiency
Single infusion, 153°F for 60 minutes (1.3 quarts per lb). Pull 1 gallon decoction, add to 1 gallon boiling water, bring to boil and reintroduce to mash to mash out at 165°F. Continuous sparge with 175°F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.047 7.5 gallons
Hops: 1 oz. Northern Brewer (9% AA, 60 min.)
1.5 oz. Cascade (6% AA, 25 min.)
1 oz. Columbus (15% AA, 10 min.)
1 oz. Centennial (aroma)
Yeast: Safale US-05
