Cali-Belge Trippel Wit IPA

Kind of a Belgian Trippel with a emphasis on wheat meets a robust Californian IPA with extra hopping towards the end.

28 HCU (~15 SRM)
Bitterness: 45 IBU
OG: 1.121 FG: 1.014
Alcohol: 13.9% v/v (10.9% w/w)
Water: Filtered artisian water
Grain: 10 lb. Belgian pale
2 lb. Wheat malt
1 lb. Belgian aromatic
1 lb. Belgian biscuit
3 oz. Belgian CaraMunich
3 oz. Belgian Special B
8 oz. Flaked oats
Mash: 80% efficiency
Boil: 60 minutes SG 1.093 6.5 gallons
0 lb. 12 oz. Belgian candi sugar
3 lb. 4 oz. Honey
Add 1oz of Coriander and 4oz of Sweet Orange Peel at 5 minutes (with the Centennial & Chinook hops)
Hops: 1.5 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Saaz (3.75% AA, 45 min.)
1 oz. Saaz (3.75% AA, 30 min.)
0.25 oz. Centennial (10.5% AA, 15 min.)
0.25 oz. Chinook (12% AA, 15 min.)
1 oz. Saaz (3.75% AA, 15 min.)
2 oz. Saaz (aroma)
Yeast: WLP500 in first fermentation
WLP715 in secondary fermentation
Log: Primary fermentation @ 68° F
Secondary fermentation @ 72° F

The Chinook & Centennial hops are 0.5oz each @ 5 minutes, not 15 minutes
Carbonation: Kegged. Force carbonated @ 8psi for 3 days.
Tasting: Tune in... I'll let you know how this turns out once it's kegged and tapped. Should be somewhere between perfection and disaster.
