A malty, hoppy Imperial American Red. This should be a good one folks. Brew date: 6/8/11.

Alcohol: 9.8% v/v (7.7% w/w)
Water: R.O. water with a heavy pinch of gypsum added to the boil kettle.
Grain: 21.2 lb. American 2-row
3 lb. American Munich
14.4 oz. Belgian aromatic
1.5 lb. American crystal 40L
3.2 lb. Belgian CaraMunich
1.4 oz. Roasted barley
Mash: 93% efficiency
Mash at 150*F for 60 minutes, 10 minute mashout at 168*F. Add 1 tbs. 5.2 mash enzyme.
Boil: 60 minutes SG 1.071 14 gallons
Whirfloc tablet added at 15 minutes prior to flameout. Wyeast yeast nutrient added at 5 minutes prior to flameout.
Hops: 1 oz. Warrior (17.2% AA, 60 min.)
.63 oz. Galena (11% AA, 60 min.)
2.25 oz. Chinook (13% AA, 15 min.)
2.25 oz. Columbus (14.7% AA, 15 min.)
5/8 oz. Amarillo (10.1% AA, 15 min.)
.5 oz. Galena (11% AA, 15 min.)
2.25 oz. Centennial (10.9% AA, 10 min.)
2.25 oz. Cascade (5.4% AA, 0 min.)
2.25 oz. Centennial (10.9% AA, 0 min.)
1.25 oz. Amarillo (10.1% AA, 0 min.)
1 oz. Galena (11% AA, 0 min.)
Yeast: 1 packet US05, cultured on a stirplate.
Carbonation: Keg and slow carb to 2.3 volumes.
