Smokey Oak IPA

A hoppy but traditional IPA that features a slightly smoked oak
flavor to reproduce classic IPAs after 8 months in oak barrels.

Alcohol: 6.8% v/v (5.3% w/w)
Grain: 32 lb. British pale
1 lb. Wheat malt
1 lb. British crystal 20L
1 lb. British crystal 45L
0.5 lb. Belgian biscuit
Mash: 72% efficiency
Add 5 gallons hot liquor at 170 deg for 5 min to warm mashtun.
Add 2 tsp gypsum, and mash in grain and hot liquor.
Boil: 90 minutes SG 1.051 19 gallons
Add 2 tablets whirlfloc at 15 min before end of boil
Hops: 3.5 oz. Zeus (12% AA, 90 min.)
1 oz. Chinook (12% AA, 30 min.)
1 oz. Simcoe (11.9% AA, 30 min.)
0.5 oz. Chinook (12% AA, 20 min.)
0.5 oz. Simcoe (11.9% AA, 20 min.)
0.5 oz. Chinook (12% AA, 10 min.)
0.5 oz. Simcoe (11.9% AA, 10 min.)
1 oz. Chinook (aroma)
1 oz. Simcoe (aroma)
Yeast: Add 6 oz lightly roasted oak chips to the fermentor.
Pitch with Wyeast 1056
