Hop Experiment 2

This is my experimentation based on the Brewers Best HopNog 2011 kit.

Type: Extract w/grain Size: 5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 72 IBU
OG: 1.069 FG: 1.016
Alcohol: 6.8% v/v (5.4% w/w)
Grain: 4 oz. Wheat malt
8 oz. American crystal 10L
8 oz. American crystal 20L
8 oz. American crystal 40L
4 oz. Dextrine malt (Cara-Pils)
8 oz. Gambrinus Honey malt
8 oz. Smoked
Steep: Began the steep at 158, flame off, lid on and it held well. Steeped for 60 minutes ending at 145 degrees. Fly sparged with 2 quarts water at 150 degrees.
Boil: 60 minutes SG 1.115 3 gallons
6.6 lb. Light malt extract
1 lb. Light dry malt extract
Added the bittering hops as it was warming to boil. Added LME at boil, added DME with 10 minutes remaining.
Hops: 0.75 oz. Millennium (17.4% AA, 65 min.)
1 oz. HBC-342 (14.9% AA, 35 min.)
1 oz. HBC-342 (14.9% AA, 15 min.)
1 oz. HBC-342 (14.9% AA, 5 min.)
1 oz. Cascade leaf (aroma)
Yeast: White Labs Belgian Strong Ale Liquid yeast #WLP-545. It erupted at opening and I lost some of it. I added 2 teaspoons of Safale S-04 to help achieve a dry finish.
Log: Brewed on 11/12/11. Cascade whole hops will be added at racking as a dry hop. 11/18 - still a little airlock activity and it smells great.
