Sunnybrook Kolsch [rebirth]

Revisiting my first Kolsch recipe. Based on reccomendations from Brews and Views forum members many years ago.

Color:
3 HCU (~4 SRM)
Bitterness: 17 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Water: Used Five-Star 5.2 in strike water
Grain: 4 lb. Wheat malt
36 lb. American 2-row
Mash: 65% efficiency
Single infusion mash at 151F for 1 hour. Step up to 170F for mashout.
Boil: 60 minutes SG 1.042 23 gallons
Rehydrated irish moss 10 minutes before flameout.
Hops: 4 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Saaz (3.75% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: Whitelabs WLP029 - Kolsch, from a 750ml starter.
