Wheatwine using Gumballhead clone recipe as the base

2 lb. 0 oz. Belgian CaraVienne
4 lb. 0 oz. Raw wheat
Mash: 40% efficiency
154 deg / 60 mins / 4.5 gals / 180 deg water
168 deg / 30 mins / cereal mash addition
Boil: 90 minutes SG 1.068 7 gallons
3 lb. 5 oz. Wheat extract
IM at 5
Hops: .5 oz. Amarillo (10.5% AA, 60 min.)
.5 oz. Magnum (12% AA, 30 min.)
1 oz. Amarillo (10.5% AA, 15 min.)
2.5 oz. Amarillo (aroma)
Yeast: Nottinghams x 2 in 2 quart starter
Log: This recipe can't be added up in the recipator...There was a cereal mash done for the raw wheat (150 deg steep for 30 minutes, then bring to a boil)
pre boil was 1.092, SG 1.148
Used Amarillos at 55 (.5 oz), 15 (1.0 oz), 5 (1.0 oz), FO (1.0 oz), and 1 oz dry hop primary.
Carbonation: 2.2 volumes Corn Sugar: 3.47 oz. for 5 gallons @ 65°F
Tasting: I love Gumballhead (Three Floyds), so I decided to do a wheatwine according to that recipe....Use a BIG starter for this one, and give it plenty of time to ferment out...
