14 HCU (~9 SRM)
Bitterness: 74 IBU
OG: 1.072 FG: 1.018
Alcohol: 6.9% v/v (5.4% w/w)
Water: Obtain 5.2ph value - using Ozarka Spring water.
Grain: 1.5 lb. American 2-row
11.3 lb. British pale
1 lb. American crystal 40L
.75 lb. Dextrine malt (Cara-Pils)
Mash: 66% efficiency
Mash in 4 gal of water at 170F.
Mash for 1 hour
Add 1.5 gal near boiling water to bring up to 165F.
Rest for 10 min and then recirculate.
Sparge with 1 gal of water at 172F.
Boil: 90 minutes SG 1.103 3.5 gallons
Add 1/2 oz Irish Moss with 15 min left in boil.
Hops: 1 oz. Galena (13% AA, 60 min.)
.5 oz. Northern Brewer (8.5% AA, 30 min.)
.5 oz. Nugget (12% AA, 30 min.)
1 oz. Northern Brewer (8.5% AA, 15 min.)
1 oz. Nugget (12% AA, 15 min.)
2 oz. Northern Brewer (aroma)
.5 oz. Nugget (aroma)
Yeast: Use Belgian Trappist
Log: Ferment at 65F for 3 days then at 72F for remainder.
