Shake Hands with Wheat

The first true wheat beer I've made, this one seems pretty good so far.
Another week in the bottle should mellow it out a bit. I wanted to experiment a bit,
so I added coriander and lemon zest to the secondary (no lemon seeds in my glass!).
The result is a quite tangy beer, but not over citrusy.

Color:
3 HCU (~3 SRM)
Bitterness: 16 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.4% v/v (4.2% w/w)
Water: 3 gallons Poland Spring water, 2+ gallons rusty tap water
Grain: 1 lb. Wheat malt
Steep: 155°F for about 30 minutes in 2qt tap water.
Boil: 60 minutes SG 1.074 3.5 gallons
6.6 lb. Wheat extract
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Saaz (aroma)
Yeast: Wyeast # 3068
Log: 7 days primary @ 67°F, 9 days secondary @ 67°F. Added 1.5 oz. whole coriander and zest of 5 lemons to secondary.
Carbonation: Bottle carbonated
Tasting: Needs a bit more carbonation next time - the bubbles are lacking. A good, crisp beer for hot days (too bad its December)
