Alcohol: 3.4% v/v (2.6% w/w)
Water: Carbon Filter
Grain: 2.5 lb. Belgian Munich
6 oz. Belgian aromatic
7 oz. Crystal 40L
1 oz. American black patent
Mash: 65% efficiency
Mash in at 104F with 2.5 Qt. Acid rest for 15 minutes.
Add 4 qt boiling water and heat to 154f. Rest 60 minutes.
Raise to 160F and sparge with 4 Qt 170F.
Boil: 120 minutes SG 1.049 4.5 gallons
3.3 lb. Light malt extract
.5 lb. Wheat Extract (dry)
1 tsp rehydrated Irish Moss flakes added last 15 minutes of boil.
Hops: .7 oz. Kent Goldings (4.9% AA, 60 min.)
.5 oz. Fuggles (4.1% AA, 60 min.)
.5 oz. Fuggles (4.1% AA, 30 min.)
.3 oz. Kent Goldings (4.9% AA, 15 min.)
Yeast: Wyeast 1084 (Irish Ale). 1/2 gallon starter.
Log: Ferment at 60-65° F.
Brewed 7/23/99.
Racked to secondary on 7/27/99. Added polyclar. Very little activity.
Bottled on 8/1/99.
Carbonation: 2.2 volumes Corn Sugar: 4.46 oz. for 5.5 gallons @ 88°F
The house had gotten hot!
