Mash: 65% efficiency
Dough in at 145F. Let temperature rest between 133-138 for 20 minutes
Add boiling water to raise temperature to 145-148. Hold for 30 minutes.
Add more boiling water to raise temp to 155F for 30 minutes.
Mash out at 167F
Boil: 60 minutes SG 1.118 2.25 gallons
3.5 lb. Light malt extract
.5 t Irish Moss Powder last 5 minutes of boil
Hops: 1 oz. Magnum (13% AA, 60 min.)
.5 oz. Target (11.5% AA, 60 min.)
.5 oz. Target (11.5% AA, 30 min.)
.5 oz. Target (11.5% AA, 15 min.)
1 oz. Liberty (aroma)
Yeast: Pouring on top of yeast cake from an Amber Ale constisting of a Saison Ale Yeast and Pacific Ale Yeast
Log: Dry hop with 1 oz. loose Liberty hops after racking to secondary.
Carbonation: 2.7 volumes Keg: 17.2 psi @ 45°F
Corn Sugar: 4.77 oz. for 5 gallons @ 64°F
