Wheatbuzz

This was a test cook of 2.5 gallons in a 3 gallon single fermenter.

Color:
21 HCU (~12 SRM)
Bitterness: 8 IBU
OG: 1.084 FG: 1.010
Alcohol: 9.5% v/v (7.5% w/w)
Water: City water. Water is soft, no discernable taste. Made good beer before.
Grain: 2 oz. American crystal 20L
2 oz. American chocolate
Steep: Add milled grain in grain bag to cold water, bring to boil, allow to remain in boil about 2 minutes.Drained but did not squeeze bag
Boil: 45 minutes SG 1.140 1.5 gallons
3.3 lb. Wheat extract
2 lb. Honey
I used a grain bag for the milled grains, hop bag for the leaf hops and added .25 teaspoon irish moss during last 10 minutes.
Hops: 1 oz. Saaz (3.75% AA, 30 min.)
Yeast: Dry yeast, started in a two cup container with warm water and small amount of the wort, for about 20 minutes. Good activity.
Log: Wort went to fermenter on 7/31/06, ambient temp 75F, 10 days, racked to bottling bucket, and bottled in .5 L flippies on 8/9/06. Final SG down to 1.010 (!).
Carbonation: .5 cup brewers powdered bottling sugar.
Tasting: Cleared crystal clear. Tasted chilled on 8/21/06, Good carbonation, color and head. Slight chill haze, tastes great, will adjust and brew 5 gal soon.
