Bitterness: 37 IBU
OG: 1.095 FG: 1.025
Alcohol: 9.0% v/v (7.1% w/w)
Water: 1 tsp. salt to the boil
1 tsp. gypsum
Grain: 1 lb. Dextrine malt (Cara-Pils)
1.5 lb. British crystal 70-80L
.25 lb. Roasted barley
1 lb. Flaked barley
1 lb. Flaked rye
1 lb. Flaked wheat
.5 lb. Smoked barley
Mash: 30% efficiency
60 min. @ approx. 155° then 10 min. @ 170°. Sparge with same.

Pregelatinized grains mashed simultaneously but separate to reduce
stickiness of the mash-out. Same procedure.
Boil: 60 minutes SG 1.095 5 gallons
6.6 lb. Light malt extract
3.3 lb. Amber malt extract
1 lb. Belgian candi sugar
1 tsp. irish moss at 15 min.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 30 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: East Labs Edinburgh Ale Yeast
Did not use starter (no problem)
Log: Ferment cool (65°F) until FG reached.
Secondary 65°F for at least 4 weeks.
