Mash: 75% efficiency
Mash at 155 degrees for 60 minutes
Boil: 90 minutes SG 1.062 6.5 gallons
1 lb. Honey
In a hop bag combine: 4 oz. - 8 oz. of dried angelica root, 2.5 tablespoons of fennel seed, 1 tablespoon star anise (3 or 4 whole stars), and 1 whole lemon zest. Add hop bag to boil with 20 minutes remaining.

Add honey to boil with 15 minutes remaining in the boil.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
Yeast: White Labs Edinburgh WLP028
