Alcohol: 4.9% v/v (3.9% w/w)
Water: Add a teaspoon or so of gypsum if you like.
Grain: 0.5 lb. Belgian Biscuit
0.5 lb. Belgian CaraMunich
0.5 oz. Black Patent
2.5 oz. Roasted Barley
Steep: Steep grains for the typical 45 minutes @ 155° F.
Boil: 60 minutes SG 1.052 5 gallons
6 lb. Light LME
0.5 lb. Cane Sugar
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1.5 oz. Kent Goldings (5% AA, 60 min.)
0.5 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Fuggles (aroma)
Yeast: Wyeast #1728 Scottish Ale XL
Log: Add the 0.5 lb of cane sugar during primary fermentation.
Carbonation: Bottle using corn sugar or force carbonate in kegs.
