Mash: 74% efficiency
Mash Temperature 152 deg. for 90 min.
Boil: 90 minutes SG 1.058 17 gallons
2 lb. Brown sugar
Irish Moss @ 45 min.
Hops: 57.5g Cascade (6% AA, 60 min.)
95.8g Centennial (10.5% AA, 60 min.)
47.9g Centennial (10.5% AA, 30 min.)
47.9g Centennial (10.5% AA, 15 min.)
47.9g Mt. Hood (4.5% AA, 15 min.)
50g Centennial (aroma)
50g Ammarillo (aroma)
Yeast: Yeast: White Labs Dry English Ale WP007 Pitched in 1 Quart starter 24 hours ahead of brewing
Log: After chilling to 80 degrees, added 4 gallons filtered water to fermenter before pitching yeast to bring final volume to 15 gallons.
Dry hopped with 50g. Amarillo & 50g. Mt. Hood hops after one week.
Gelatin treatment 3 days before kegging.
Carbonation: Force carbonated in Corn Keg.
Tasting: A beautiful Red color, very hoppy nose, moderate bitterness with a clean dry finish. Great tasting Ale.
Next time I would have added more Amarillo hops during flame off.
