Alcohol: 4.8% v/v (3.7% w/w)
Water: Use 1.5 gallons distilled water & 1.5 gallons bottled drinking water for mash.
Use 6.5 gallons bottled drinking water for sparge.
Grain: 8 lb. 2-Row
8 oz. Crystal 15L
8 oz. Dextrine malt (Cara-Pils)
8 oz. Flaked wheat
Mash: 81% efficiency
Grist ratio: 1.3 qt/lb

Heat 3 gallons mash water to 168°F.
Add grains and maintain temperature of 152°F for 60 minute rest.
Heat to 168°F and rest for 10 minutes for knockout.
Transfer to lauter tun and recirculate for 20 minutes.
Sparge with approximately 6.5 gallons of 168°F water to collect 6.5 gallons.
Boil: 60 minutes SG 1.043 6.5 gallons
Add 1 tsp. rehydrated Irish Moss @ 15 minutes.
Hops: 0.5 oz. Northern Brewer (7.8% AA, 60 min.)
0.5 oz. Hallertauer (7.1% AA, 15 min.)
0.5 oz. Hallertauer (aroma)
Yeast: Make 1 quart starter at 1.040 gravity using DME and yeast nutrient.
Pitch White Labs WLP029 German Ale/Kölsch Yeast.
Log: Ferment in primary at 65-69°F for 1 week.
Ferment in secondary at 65-69°F 1 week.
Condition at 40°F for 1 month.
Carbonation: 2.6 volumes Keg: 13.4 psi @ 40°F
Tasting: Right on style. Everybody liked this one.
