Lachlan's 75/- Scottish Ale

This is a slightly modified version of a recently published recipe. I'm using locally available organic grains and hops.

Beer: Lachlan's 75/- Scottish Ale Style: Scottish Export Ale
Type: All grain Size: 5.5 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 24 IBU
OG: 1.045 FG: 1.015
Alcohol: 3.8% v/v (3.0% w/w)
Water: Local tap water, usually "soft"
Grain: 8 lb. Scotmalt, organic
4 oz. Smoked/Peated Malt
6 oz. Dextrine malt (Cara-Pils), organic
6 oz. Roasted barley, organic
Mash: 75% efficiency
Boil: minutes SG 1.035 7 gallons
Hops: .75 oz. Brittish Target (9% AA, 60 min.)
Carbonation: 2.0 volumes. Next time much less.
Tasting: Mature after five weeks in the keg. A bit thin.
