Grain: 22 lb. Belgian pale
2 lb. British crystal 70-80L
1.5 lb. British chocolate
1 lb. British black patent
1.5 lb. Raw barley
1.5 lb. Flaked oats
Mash: 80% efficiency
Single step infusion mash @ 153 degrees.
Sparge with 9 gallons water for 60 minutes.
Boil: 60 minutes SG 1.065 13 gallons
Hops: 2 oz. Northern Brewer (8.5% AA, 60 min.)
2 oz. Northern Brewer (8.5% AA, 45 min.)
2 oz. Kent Goldings (5% AA, 30 min.)
2 oz. Kent Goldings (5% AA, 5 min.)
Yeast: Wyeast Scottish Ale 1728
Log: Add 8 ounces of French Oak barrel chips @ start of boil (bake @ 220 degrees for 20 minutes, let cool and add to fermentor)
