Wylie's Scotch Ale

My second shot at a Scotch Ale recipe, my 11th all grain batch. This
one was a beauty. Nice sweet malty Scotch ale flavor but lacking the
dicetyl bite common to most Scotch ales. Many friends and family thought
this was one of my best batches this year.
Brewed on Monday, 11 August 97.

Type: All grain Size: 5.4 gallons

41 HCU (~19 SRM)
Bitterness: 26 IBU
OG: 1.059 FG: 1.011
Alcohol: 6.2% v/v (4.9% w/w)
Water: 1/4 tsp gypsum, 1 ml Lactic Acid per 3 gallon liquor.
Grain: 8 lb. American 2-row
1 lb. American crystal 90L
1 lb. American crystal 40L
2 oz. American chocolate 325L
1 lb. 8 oz. Homemade aromatic (2-row American baked 15min @350F)
Mash: 76% efficiency
Rest @ 130F (50C) for 30 min. (3 gal - 10L)
Rest @ 158F (60C) for 30 min.
Heat to 165F (70C)- 15 min.
Started sparge @ 168F. Ran for 75 min - 4.5 gal (16L) sparge water volume.
Collected 6.5 gal for boil.
Boil: 70 minutes SG 1.049 6.5 gallons
Hops: .5 oz. Northern Brewer (8.8% AA, 60 min.)
.25 oz. Northern Brewer (8.8% AA, 45 min.)
.5 oz. Fuggles (4.3% AA, 30 min.)
Yeast: Wyeast 1338 from 1qt. starter. A low temperature (60F, 15C) yeast
that makes a smooth ale. Clears brillantly.
Carbonation: Artificial
