Grain: 20 lb. German Pilsner Malt
3.75 lb. Wheat malt
Mash: 70% efficiency
Mash in with 160°F water to rest at 150°F for 1 hour. Check for conversion & mash out at 168°F.
Boil: 60 minutes SG 1.053 13 gallons
1.25 lb. Belgian candi sugar
2 oz. Candied Lemon Rind
Add 1 oz. Candied Ponderosa lemon rind at knock out & 1 oz. in secondary. Adjust in secondary as needed
Hops: 1.5 oz. Kent Goldings (5% AA, 60 min.)
1.5 oz. Kent Goldings (5% AA, 30 min.)
Yeast: 1000ml starter of White Labs WLP 550 Belgian Ale Yeast.
